On this episode of Nihon NY, we pay a visit to Ryohei where we learn how to make the Japanese staple snack, onigiri. Find out how to correctly wash and prepare rice, shape both Tokyo style and Osaka style onigiri, as well as what ingredients work best… and what work worst. Some recommended ingredients for onigiri: Bonito flakes with soy sauce (okaka) Pickled plum (umeboshi Konbu (marinated kelp) Flaked salmon Tuna/Salmon with Mayo Cod roe Spicy cod roe (mentaiko) Japanese pickles (tsukemono) Ground meat (beef/pork) Shrimp tempura Hijiki Yaki-Onigiri (grilled onigiri with Soy Sauce/Miso brushed on top… without nori wrapper) Eel Anything that tastes good mixed with Mayo Anything that goes well with rice Feel free to experiment and comment on any interesting or good ways to make onigiri!
